The process of Scotland’s slowest distillation can be tasted in every dram of this Cask Strength Single Malt by Glengoyne. Hand-crafted from inception to glass, this single malt also shows the dramatic effect of warm air drying of the barley rather that using peat smoke. Bottled at the higher ABV, the balance between the subtle flavours imparted from the slow distillation and the power of the un-chillfiltered single malt imparts flavours of digestive biscuits, ripe bananas and a hint of pepper. Robust and full-bodied, this is a whisky of the utmost strength that should be enjoyed with some pure distilled water to your taste.
|Dimensions||245 × 105 × 105 cm|
Here’s the fifth batch of Glengoyne Cask Strength, boasting plenty of that Sherried goodness the distillery is known and adored for, presented at a generous 59.1% ABV. A cracking release.
Nose: There’s rich oak spice, tannic red grape skins and fresh malt which blends with sweeter notes of buttery toffee popcorn, apple pie, vanilla ice cream and white chocolate buttons.
Up to six years from oak forest to Highland distillery. That is how long it takes before sherry casks are finally ready to receive this spirit. However, the journey has just begun. Next, time and wood work together – within the cool darkness of the traditional, earth-floored warehouses. Here, away from sight, the amber hue and rich mouthfeel develop, along with a finish that lasts and lasts. Glengoyne whisky is then carefully bottled at cask strength, to preserve the rich, bold flavours. Digestive biscuits, ripe bananas and a hint of pepper.
This is the taste of Scotland’s slowest distillation, bottled as tradition insists: at cask strength, non chill-filtered. Like every Glengoyne, the amber hue is created by time and oak, nothing more.
Palate: Stewed fruits, Seville orange and chewy toffee with some warm gingerbread spiciness emerge first, with hints of peaches and cream and caramelised apple underneath. A little earthy clove and black peppercorn add depth among burnt sugar and some tropical fruit.
Finish: More cooked orchard fruit lingers with a little bit of chocolatey malt and a sprinkle of cinnamon.
Overall: A dram that moves in many directions simultaneously, but enough Glengoyne DNA keeps things interesting and prevents it from becoming too muddled.
