This gin is the first collaboration in Four Pillars Bartender Series and was originally the result of a conversation between distiller Cameron and leading bartender Jason Williams – they wanted to create a gin specifically for the Negroni. Four Pillars Spiced Negroni Gin is a highly aromatic, rich, and (yes) spicy gin with great power and intensity. They added an exotic West African spice called Grains of Paradise, one of the most unusual spices in the world, with clove and Sichuan characters but although very powerful, the spice tends to glow rather than become hot. Four Pillars also used beautiful organic blood oranges in the botanical basket, as well as some ginger. These wonderfully fragrant fresh botanicals help lift the spice to another level. Four Pillars sourced olive leaf and olive oil from Cobram Estate, in northern Victoria after visiting Cobram Estate during olive harvest. Using olive leaf and oil from the Picual, Hojiblanca and Coratina varieties. The aroma, flavour and texture of fresh olive is stunning, and they did a year of trials before finalising the recipe for this gin.
The botanicals include a big base of juniper with a savoury overlay of coriander seed, rosemary, olive leaf, olive oil, bay leaf, lemon myrtle, macadamia, orris root, and fresh lemon and grapefruit. Fresh ingredients were vapour infused while the others macerated in the pot. This gin is savoury, textural and bright. Perfect for any Martini ? Gibson, dirty, or dry with a twist. For a longer drink try it in a Spanish-inspired gin & tonic, with rosemary and lemon!
